Quick Crunchy Collard Greens

Most recipes for collard greens call for simmering the chopped greens with smoked meat. Here’s a good recipe for vegetarians – also it requires minimal cooking time, a plus in this heat! The collared greens are steamed just long enough to get rid of the bite, while staying crisp.


10 oz collared greens, well rinsed and coarsely chopped

2 scallions, white part plus 2 inches of greens, chopped

1 Tb sesame seeds, toasted

2 tsp fresh lemon juice

In a large saucepan, bring 2 inches of water to boil. Add the collards, cover, and cook until they turn bright green, about 3 minutes. Immediately remove with a slotted spoon and transfer to a colander. Shake the water out thoroughly.

In a large bowl, combine scallions, sesame seeds, and lemon juice. Add the collards and stir. Serve immediately.
