Wild Blueberry Vinaigrette

This dressing is delicious over Spring Greens. I toss the dressing with the greens, and then sprinkle additional berries on top. Store extra dressing in the fridge.

½ cup olive oil

¼ cup red wine vinegar

2 Tb balsamic vinegar

1 clove of garlic

2 tsp prepared mustard

½ tsp salt

½ tsp pepper

½ cup of fresh blueberries


Combine all ingredients – except blueberries –in a jar and shake until thoroughly blended. Add blueberries. Makes 1 ½ cups.
